Aviation - The Aviation was created by Hugo Ensslin, head bartender at the Hotel Wallick in New York, in the early twentieth century. The first published recipe for the drink appeared in Ensslin's 1916 Recipes for Mixed Drinks.
How To Make The Aviation
Add all the ingredients to a shaker and fill with ice. Shake for 15 seconds and strain into a chilled cocktail glass. Garnish with a cherry if desired.

Tasting Notes
Approachable classic cocktail with complicated herbal notes, violet/flowery mid-palate which plays well against the juniper notes. In some ways, "tastes like purple."
