Muddle fresh ginger in a cocktail shaker and add the remaining ingredients (except the Islay Scotch Whisky) and shake with ice for 15 seconds. Double strain with a tea strainer over ice into your glass. Top with single malt Islay Scotch and garnish with candied ginger.
Not overly smoky considering the topping of Islay Scotch leaving a honey, citrus scotch profile.
